I spent most of the day on this today and here is what I found so far.
The default installation fails to boot X properly. Installing via the "Text
mode installer" - an option in the boot menu - does work. I got Gutsy
installed fine. However, installing the parallels tools causes X to fail to
boot again. Trawling the various forums via Google about this shows that there
are many people having this problem. I couldn't find a solution that I was
able to make work.
I don't think Parallels even claims to support the latest Ubuntu distro with
their "Parallels Tools", the software makes it possible to move your mouse out
of the desktop windows without hitting Ctrl-Alt. I guess we have to wait for
them to release an update.
I redid the full installation without this time installing the "Parallels
Tools" and all seems fine so far.
