I'm running Cherokee with fcgi + PHP in Ubuntu without problems, and I
wonder what's the difference with Debian.

Can you check which shell implements /bin/sh on your system?

May be it's not related, but the "/bin/sh -c exec ..." rings a bell.
Based on my experience:

 * OpenBSD (old version): pdksh OK
 * Ubuntu Lucid: bash OK
 * Debian: ? (dash?)

Anyway, Cherokee shouldn't crash. If you can check the shell an try
changing the symlink to, let's say, bash... you'll have enough
information to file a bug :)
