Completely agree about the apt-pinning. I have a few things pinned especially since things are working the way that I would like them to. Looking at you php-fpm / php5.3. Anyway, I would setup a sandbox with virtualbox or vmware to test the "unstable" build. I am a firm believer in the sandbox/vm approach for the dev->staging->production model. I don't know your current setup nor do I know what application you are running but it's a good philosophy for a lot of sites out there. Since Virtualbox is free and works well why not use it to play?
Furthermore, you could use pylot to do the load testing to get a good feel if that will be solid enough for your needs and if so you can roll it into production depending on your setup.
