I think Dan covered things pretty well. Two thoughts to add... I have no clue about what the 454 engines are in a 71 or 72 Chevelle... are they an LS5 or was that only in 1970? But really if the block numbers match (you may want to check after you get it back to be sure that nothing was mixed up at the shop) you are good to go. I really haven't noticed mush of a market for a LS5 or even a LS6 lower end (Note... minus car and/or heads & intake) over any other 4 bolt main BBC. The heads on an LS6 may have some value, but only to the right buyer. I wouldn't be all that concerned with the original and value except from the matching numbers stand point. If it is that much of a concern, just buy a short block or another motor to build and store the original one.
 
Almost every motor needs a .010 over to have the rings reseal, especially if the old motor had lots of miles on it. .030 is the most common and easiest to find pistions and rings for. Since you are local... just wondering what shops you have been considering using for this. Also what are you plans for the motor... keep it stock... hot rod it a tad bit? I would highly recomend you also have you heads gone through do the valve seats, a 3 angle valve job and some pocket porting definetly is worth it for some more power. Good luck.

When redoing the cylinders, is it always bored over?

Any precautions you might take to make sure you get back the same 454 with
all the same parts. (less the ones that will be replaced of course) Maybe I
am paranoid but it seems to me these motors are very valuable and thus a
target for a switch of parts? true?
