If the motor is in the car, put a floor jack under the lower control arm and it will stay there when you separate the upper arm from the spindle. I've taken apart quite a few front suspensions on Chevelles and have never had the spring come flying out. It's not taking it apart you need to worry about, it's recompressing the spring to get it back in that you need to be cautious with. Usually when I take a part the suspension, it involves a big hammer, a long pry bar, and the wrenches need to take the bolts out.
Here is a little trick that works pretty well. Put a floor jack under the lower arm. Take out the bolts for the lower arm first. Next, take the pry bar and move the lower arm out of the mounts in the frame and lower the jack at the same time. The spring will come right out.
You could also go get a spring compressor and do it that way. I have had incidents where the compressor did not hold the spring and it let loose, not a pleasant thing to go through.
