I'm done a couple 4 speed conversions...pretty straight forward especially if you don't have to weld the z-bar bracket to the frame (I believe a '68 frame is drilled and tapped).
As far as going to a Tremec, I did that conversion last year. It all depends on what you want, how you plan to drive it, and how much you want to spend.
