I would leave the back side of the fenders alone with the EDP coating.  That stuff is better than any of the other sealers out there.  I left my steel inners alone, never painted them.  I use amor-all on the EDP coating and they always look nice and shiney.  Painting isn't all that hard, it's all in the prep work.  Let me know when you are ready for paint, I may be able to hook you up with use of a paint booth.  For ease of application and durability, I would go with a single stage urethane paint.  It flows and covers nice, and is easy to work with after it's hardened.  I am using it on the Charger.
