The change and continued change in the pups personality and behavior is normal. It is growing up, but still a baby...it will be into all kinds of mischief before it matures. One minute they wants to be loved on, one minute they want to sleep and the next they want to wrestle. Sounds a lot like human babies :-)
Someone mentioned growling at her when she does bite. That is an excellent idea. And one that many experts will tell you. Dogs are pack animals and learn their behavior by their interaction with their pack and with their alpha. IF she bites you, growl, whimper, ect and immediately cease interaction. go away from her. wait a few minutes then go back. She will learn that when she hurts, her littermates or Alpha (you) will no longer play with her. a lot of behavior can be understood and corrected if you place yourself in the pups shoes. Try to "think" like a puppy or littermate and think of how other pups would react to the action. Imitation that reaction will tune into her natural instincts to please her alpha and interact with her littermates.

First of all, congratulations on your new baby!
At her age re-direction is learned very easily.  Have a toy that she likes in your hand... the VERY INSTANT her mouth makes contact with your skin give her a growl, a 'no', any little scolding noise and quickly replace the skin with the toy.  As SOON as she switches her attention to the toy praise her, or click and reward if you are clicker training.  At first, if she doesn't have much interest in the toy it will help to praise her for even accidentally touching the toy when you put it between her mouth and your skin.
As far as not eating goes, The baby I am getting in Jan. will be the first toy size weanling I've been around in 15 years so I can't help too much, but from raising other breeds I know that it will help your vet to know what is going on if you measure the food and water you give her each day, then measure again to see exactly what she consumed so the vet can know best what to do for her if you end up having to take her in.    I've been reading and learning all I can about chi babies in preparing to bring home my new baby and I've read how dangerous it can be for a chi puppy not to eat often to avoid hypoglycemia so I wouldn't wait too long before taking her to the vet.

She  was eating Proplan at the breeders( so she said).....Now I cannot get her to eat.....Last night the only way she would eat was if I gave her 1 piece at a time (I know, spoiling the girl)...She will not drink water at all from her water dish so I water her food down a little......I worry she is not getting ehough water and she only picks at her food. 
 
We love her very much - I am worried about her!!!!
