The device you are looking for is known as a "servo potentiometer", but it
is not cheap!.

I think  http://www.newark.com   carries Bourns products.


There are some factors which much be considered:

While this example will support 'continous' rotation (up to 10 or 20 million
turns anyway) like all "one-turn" potentiometers that I know of, it has a
'dead zone' at one point in its travel.  The effective electrical travel is
340 +/- 3 degrees.

This ambiguity can be resolved by mounting two "one-turn" potentiometers 90
degrees out of phase.  Then they will cover each others dead zone.

What do you mean by "several turns".  There are many precision 10-turn
potentiometers which have electrical continuity over at least 3600 degrees
of rotation.  (Again, see bourns).  If you can confine your total rotation
to not more that 10 turns, these would produce a superior result.

The only sensor that I know of that works effectively over a full 360 degree
range is an absolute angle shaft encoder.  But, again, rather expensive.
