If they work on the Linux version first, they can have the Mac version out almost literally days later. However, since the original design of Chrome was built in Windows, it's going to take a bit longer (and by a bit, I mean several weeks and up). With a program that's built in Linux, it can be built upon to make it compatible with Mac and Windows. If a program is built for a Mac, it can easily be converted to work in Linux and Windows (well, more easily Linux, but no one ever does). If a program is built in Windows and you want to port it to any other operating system, you have to literally tear apart the source code because Windows uses so many non-standard libraries. Thus, you have to take out this and that and the other, lather, rinse, repeat, and THEN you can start to build the program for another system.
Don't expect the Mac or Linux version of Chrome to be out until around the end of October. If you run Linux, there's supposed to be a way to use Wine to run Chrome, and it supposedly works pretty well. I had trouble getting it to run on my system though.
