Answering my own question - partly anyway. I've added 'catia=true' when sharing a filesystem, like: # zfs set sharesmb=name=john,catia=true dataPool/john
This has odd effects, in that the filenames look different from different clients. But, at least the files can then be accessed from Windows clients.
