Lambs Wool is a version of mulled ale made with sugar, spices and the pulp of roasted apples. Traditionally, in the countryside crab apples are used in hot drinks and punches, and on Christmas morning in days gone by, the farm and estate workers and their wives were invited 'up to the House' to be offered Lambs Wool and the best cider to drink. Ingredients: 2 pints (1.25 litres) brown ale 1 pint ( 500 ml) sweet white wine 4 apples (either crab or eating, whichever you have) soft brown sugar to taste 3 inch (7.5 cm) cinnamon stick 1/2 teaspoon ground nutmeg 1/2 teaspoon ginger thin strip of lemon peel Slit skin round the centre of each apple, and bake in oven at 350 degrees F (180 degrees C) gas Mark 4, until soft and pulpy. Heat brown ale, wine, spices and lemon peel in a large pan. Remove skins and cores from apples, and mash the flesh, then stir into the liquid. Discard the cinnamon stick and lemon peel, then strain the mixture through a sieve, pressing down well. Reheat, adding the brown sugar to taste. Serve piping hot from a punch bowl into earthenware mugs or glass tankards. Traditionally apples have been a major feature of Christmas. If the sun shone through the branches of the apple tree on Christmas morning, it was a sign of a good crop to come. And if the tree was covered in snow, this was a promise that the tree would be covered in fruit at harvest time!
