iTunes audio files are encoded in AAC protacted audio format, called M4P 
audio format. 

If you'd like to convert iTunes audio files to FLAC, you need to remove DRM 
protection firstly and then convert them to FLAC with a common audio 
converter. 

Alternatively, you can meet Apple Music Converter 
<https://www.audfree.com/drm-audio-converter-mac/>, which can directly 
convert iTunes DRM M4P files to FLAC with ease and keep lossless audio 
quality as original.
