There is an 'intr' switch that may do help you out.  Basically, it allows a process to stop looking for the file that exists on a hung export.
 
There are a number of different switches in NFS, and reading the man page would be a great start if you haven't already.
 
Truthfully, I don't use the GUI very often, and to be honest, I'm not at all clear on the whole client/server thing yet.  I think I sort of understand what happens where (thanks to the LTSP stuff) but not 100%.
 
You may also need the 'soft' switch.  And old versions of Red Hat (5.2 or below) did screwy things with NFS mounts, as I remember.

numerous NFS exports on a few of my main machines and cluster Mosix nodes and when I have a file manager open,
and the directory for mounted nfs exports is open, and one of the machines mounted goes down or is rebooted, then

kill the process for the file manager.
