I can't tell you what your problem is, but I do know that in my own experience I had Red Hat 7.0 lock up my entire system (just as you have described) more times than I can count. Since I've started using other distros such as Red Hat 8.0, MDK 8.2+ and SuSE 8.0 I have not had my whole system freeze on me. It may be a good idea to upgrade the box since RH 7.0 was a dud, you would also have the benefit of getting a journaled fs so you won't have to fsck all your drives.
