Is there a way to specify kernel parameters in the /etc/lilo.conf file so that
I don't have to type it in at the lilo boot prompt every time? Also should I
try setting AGP to 1X in the bios to slow it down?
To add a kernel directive to lilo you add the following line

append="mem=nopentium"

If you are running the drivers your AGP should be running at 1x.

You can force it to use 1x by the following addition to the Nvidia device section of your XF86Config-4 file

Option "NvAGP" "1"

for the opensource nv driver you would use

Option "AGPmode" "1".

Honestly, you are crashing too much for it to be the AGP bug. It could be your Nvidia drivers.
