It should work well as a server for you.  Once you have it built, Gentoo
will run that hardware faster then any binary distro would.  I run my Web
/ E-Mail / CVS / Development server on a PII - 400 using Gentoo.  I just
maxed out the ram (500 Meg) and it runs great.  Good luck with it :)
