Cameron. Generally the USB flash drives all just work as long as you have USB and USB Storage support available which with probably any modern distro you will. I don't think it should be a problem. Pretty much all the USB drives behave the same. AFIAK the only thing to keep in mind is that most of those "Secure" USB keys rely on software security (read Windows only) but they are usually usable by other OSes just without the crypto stuff.
As for installing Linux on the USB key that may pose more of a problem. You would need a system capable of booting off that. I don't work with new enough hardware to have any experience with that. Good luck if you try that. I would personally just use a mini CDR. Cheaper / MB and since usually you don't need R/W access to these emergency distros...
