You can build a base system on nearly anything (a 386 if you so desire), then migrate to newer hardware. partimage is a handy util for this (works accross the network too, kind of like norton ghost).
If this sounds too scary, you can do an Ubuntu install, but when the cd boots, it should tell you what to do (if memory serves, it says hit enter or type server for a base install). The server install leaves out the GUI though (which IMO is a good thing). Hope this helps.
