Unzip them with tar -zxvf name.of.file.tar.gz

Cd into their directories and run the application with ./ in front, such
as ./firefox or ./thunderbird

I keep new apps like this in ~/bin.  Of course the best choice for
Ubuntu is to find a .deb package to upgrade your existing apps.
