While not free, nor open-source - I believe you can do this with Nero.
A little off-topic, I know. But considering most everyone has a copy
of it - I figured it was worth mentioning.

More ontopic: Try MediaCoder. Not sure if they have a Linux version -
but it'll convert most anything to anything.
