Personally I would go with the default for your distro, you will likely be able to get help more easily when you have a problem. Ubuntu defaults to postfix btw, which is a very capable MTA. fetchmail will pull mail from multiple sources. The mobile device support may be reaching for the sky (I have yet to find a good solution, but then I am still looking for a really good mobile device, the OpenMoko looks promising). All I use is the KDE apps for PIM and PALM and a webDav folder with an .ics file. Grab some VMs from VMware (for use in their free player) of OpenExchange, and play around.
