Maybe a clever little script that parses the /proc/mdsats file periodically and 
fires off an email if it doesn't like what it sees?

I think smartmontools would help out there (smartd)

I don't know if they have support for Intel RAID (what chip is it?)

In your case, smartd should send you an email if something as drastic
as a disk disappearing occurred, regardless of smartd's raid
controller support.
