I connect to one of my client's exchange servers with Thunderbird.
There is an option in Exchange to provide a vanilla IMAP access, which
is how Thunderbird sees it.  The addressbook gets pulled in via LDAP
(the Thunderbird addressbook supports LDAP lookups).

For Blackberry's I use the Google plugin on my Blackberry to sync
calender data with my FLOSS software and exchange.  Sunbird is set to
store my calender in google's calender.  This works really well, as long
as you don't mind your calender being stored at Google.

Of course, Kontact and Evolution both support native Exchange
communication and should do all these things as well.  I was not able to
 get either of them to work well with Exchange 2007, but I did not spend
a lot of time on this.

If you have Exchange I strongly recommend the BES server.  It is not
FLOSS but it does work really well with Blackberrys.
