As Gustin has pointed out you can 'man in the middle' any network connection so that you can view anything leaving/entering the machine. You could also abuse the 'remote desktop' function of X, which embeds a VNC server into the X server. Using this you could view, interact with or record the user's desktop. With root access and ssh you can randomly inspect any file(s) on the machine.
