I know that I used to enjoy the install fests, the problem is that
installing most modern distros is pretty easy these days.

For the OP, I have used 5000 and 6000 series AMD cards with a triple
monitor setup for a couple of years now.  My laptop with integrated Intel
GPU can do at least 2, the same is true of desktop integrated graphics.
 None of the previous hardware configurations required any hacking, both
worked out the box with KUbuntu 11.04 through 12.10.  Debian might be more
of a challenge (I still prefer it for servers, but not for day to day
workstation use).

Before buying hardware, research is critical.  For Intel processors just
surf over to http://ark.intel.com and lookup the processor you are looking
to get.  There is a row for number of supported displays.  For the recent
"Ivy Bridge" line this is usually 3 (at least for the i5 and i7 models I
have looked at).
