There's some interesting stuff out there. The list has often mentioned KiwiGrip to replace nonskid. Some of the hardcore racers in my area are using the foam decking. You can even buy pre-cut kits for some popular racers (Melges, Viper, etc.). Not a lot of color or surface choices yet. However you can get camo.
