We do a bunch of symbolic links to move specific files. You could do more or less. We know that what we do works. If you move / to /home/root2, I believe the system will have problems booting; my guess (supported by general knowledge but not specific research) is that at boot time you won't have /home/root2 mounted as early as you want it mounted. Of course you could change the mount order, but that's a bit of surgery I wouldn't want to do on an appliance updated by packages.
