Agreed. That's clear now. I've set the dell server to use BIOS legacy mode.

Latest run, PXE boot ensues and seems to complete, however when it
comes up, it doesn't detect any boot disks at all. i.e "No Boot device
available"

I use F11 (BIOS boot manager) to explicitly select a boot device and
it offers me "Hard drive C:" , i.e Integrated PERC RAID H310 , but
after that the iDrac console just goes unresponsive.

I was toggling between trying to get legacy BIOS to boot and EUFI.
Clearly getting  BIOS boot to work is the easier problem :-)
