How about Xvfb, the virtual frame buffer? I confess that I've not tried
this with the latest C2 (my development environment is set up for other
activities at the moment) but I've found it to work with other Java-based
image manipulation libraries, like some commercial PDF generation tools.
Xvfb does utilize some resources and you have to be careful how you
configure it, but it gives you enough X to make things work...
