I am under the impression, that there are a lot more big sites out there that use cocoon, which are not published on Cocoon's page of live sites. One of the major draws to a product for me is its usage by sites with big names. Salon obviously is one. I wouldn't think listing more live sites would be a show off contest, rather it would really make a difference for Cocoon's recognition.
I would suggest that we come up with some way to encourage people to submit more live sites. A lot of good documentation can come from these too. An example would be HP who use Cocoon in various places. Like the BlueStone server which promotes cocoon: http://www.bluestone.com/products/hp_web_services/developer/faq/general.htm# 10 And also this nice presentation by Pankaj Kumar, which gave me a jump start on Cocoon's concepts: http://www.pankaj-k.net/uc2/sld001.htm Also Cocoon's site doesn't even mention that JBuilder 5+ has built-in support for Cocoon. Why not? JBuilder is still the top selling Java IDE.
