Thanks for the extra information!
It looks like you are running into DAFFODIL-2332. The core issue is that Java
versions newer than Java 12 were not supported in Daffodil 3.0.0. Since the
release, that issue has been fixed and will be part of the next release. Future
versions of Daffodil will officially support Java 8, Java 11, and Java 15.
To workaround this, some options are to either downgrade to Java 12 or older,
or build Daffodil from the latest code on github.
