Addressed the [latest feedback](https://github.com/apache/gravitino/pull/13533#issuecomment-6381132834) in 6edc4d3aa. - `spec_id` is optional again, including empty policy content. When omitted, evaluation resolves Iceberg's current `TableMetadata.defaultSpecId()` through reserved, read-only `default-spec-id` table metadata. No user setting is required. Explicit IDs still override the default. - Missing or invalid default metadata logs a warning and skips only the affected table. The resolved ID is retained in `ManifestRewriteJobContext` and job configuration, so partition evolution after evaluation cannot retarget the submitted job. The single initialization path is preserved. - Updated policy/catalog docs, OpenAPI, and Javadocs. Added coverage for metadata projection, rejected property writes, invalid/missing defaults, and explicit overrides. A real Spark regression evaluates spec 1, evolves the default to spec 2 before submission, verifies only spec 1 is rewritten, then selects spec 2 on the next evaluation. Validation: 474 tests passed, 5 skipped; formatting, affected-module Javadocs, OpenAPI validation, license checks, and diff checks passed. Docker-tagged tests were not run locally because the macOS Docker connector is unavailable. [Fresh CI is running](https://github.com/laserninja/gravitino/actions/runs/40089745490).
