### Describe the issue this Pull Request addresses Apache Hudi 1.2.1 has been released. This adds its website docs. ### Summary and Changelog - **Versioned docs:** adds `version-1.2.1` as a copy of `version-1.2.0` and makes it the default docs version. `1.2.0` stays available under `/docs/1.2.0/`, as with 1.0.2. - **Current-version strings:** bumps jar names, `--packages` coordinates, `HUDI_VERSION` and Maven URLs from 1.2.0 to 1.2.1 in `version-1.2.1` and `docs/`. "Since 1.2.0" statements are unchanged. - **Release notes:** adds a 1.2.1 section to `release-1.2.md` with the migration note, the Trino bundle change, bug-fix areas and a known issue for Spark 4.1 variant reads on Merge-on-Read tables. - **Download page:** adds the 1.2.1 section.
