Some more notes:
1) several fixes have been done on trunk (not sure it fixes anything on your 
use case but the tomcat deployer was not working in netbeans for instance)
2) the tomcat interface is not so well for ear since it forces one context and 
an ear defines it elsewhere and often more than a single one context. So the 
best is probably to use our deployer.
3) in our maven plugin we copy the artifact (*ar or directory) before starting 
tomee.
