The stream-offset test reconfigured a shared mock while scheduled tasks were still using it; give the two-stream case its own mock and close both trackers in `finally`. ### Reproduction Before this change, repeat `./mvnw -pl pinot-core -am -Dtest=IngestionDelayTrackerTest -Dsurefire.failIfNoSpecifiedTests=false test` to expose the scheduler race and wrong-type or offset-count failures.
