practical first version could keep the matrix narrow: run the previous released 
connector/runtime against a tiny savepoint, restore on `dev`, and assert source 
enumerator state plus sink state can be read without class/schema drift. Even 
one MySQL-CDC multi-table case and one generic source/sink case would catch a 
lot of upgrade-state regressions before release.
