This is marked fixed-in-dev, meaning the fix is already merged into the dev branch. It should be included in the next release; in the meantime you can build from the dev branch to use the DefineSinkType transform. As a workaround on 2.3.11, please verify whether the DefineSinkType transform is registered in your distribution (check the connectors/plugin mapping and the seatunnel-transforms-v2 jar in the lib directory), since the transform may not have been shipped or registered in the 2.3.11 release artifacts.
