Review Comment:
Agreed, this is a valid gap — I checked it against
`SeaTunnelSink.getWriteCatalogTable()` (default `Optional.empty()`) and its
call sites in `SinkFlowLifeCycle.java:208` / `:750`: without an override,
`FirebaseSink` reports `TablePath.DEFAULT` for metrics/stain-trace table
attribution instead of the real Firebase path, even though the class already
holds a `catalogTable` field. `GraphQLSink` (a very similar REST-based sink) is
the right precedent here — it overrides `getWriteCatalogTable()` returning
`Optional.ofNullable(catalogTable)`. This is a metrics/observability gap rather
than a data-correctness one, so it doesn't change the severity of the
checkpoint-flush issue I raised separately, but it should be fixed alongside it
before merge.
