Well, it's possible you need a newer version of Stuffit, though it seems odd that someone would stuff a System 6 application with a version of Stuffit that won't run. You may have to drag and drop the file directly onto the Stuffit icon to get it to unstuff (does that even work on System 6?) or first load Stuffit, then manually select the file.
As for 7.5.5 (should be 7.5.3 actually), the best way to do it is to put the files on a Mac with a serial port, then boot the Classic using the System 7.5 Network Access Disk. Then, hook up a serial cable between the two and share out the drive, and install that way. Otherwise, you'll have to find some way of getting all the images to the Classic's HD, then find a System 7 bootdisk to mount and install the OS. I don't think the Disk Copy version you'll need will run under System 6. The key really will be a System 7 boot disk.
