I have to agree with the pickle. Usually for stuff like this I use Tex-Edit Plus. Its a good text editor, low on frills, but more importantly, it allows you access to zt-mac and has a lot of options for dealing with the control characters you are referring to. Its pretty powerful, I've even used it for converting strange ASCII types like Commodore style ASCII (in which the upper and lower case sets are reversed from standard ASCII). Good luck.
