If you're copying the disk to a hard drive, you're copying all those 
individual files. Depending on the hard drive size and format (HFS vs 
HFS+), you may be seeing a minimum file size of 512, 1024, 1538, 2048, 
etc. bytes. When you copy back to floppies, which make much more 
efficient use of space, all should be okay.

As for 800K floppies, you should be able to reformat any double-sided 
double-density floppy to 800K.
