If one had a faster 68030 chip, could one replace the stock 16 mhz chip with it. I have a 25 mhz 68030 from a SBC which is not a mac, but my SE/30 has a soldered CPU, so I can't stick it in there to see what happens (without breaking out the soldering iron). Until you mentioned it, I wasn't aware that there was a SE/30 with a socketed CPU.
