ok, I crammed this "huge" 1 GB drive in to my SE/30 and have been

death...

like 1 watt? 900 mA?

I also wanted to take my SE with a messed up case and paintit and put
osme fans in the sides of it to help cool it down and use some left over

Can I learn from anyones experiences here?

Odds are anything close to current that is in a 1/3 height case (1" high) will be okay. Some of the original SE drives were 1/2 height (1.6") and could get pretty hot. Bigger and bigger drives don't use more and more power, they would melt if they did. There are variations of course but they occur across the generations of harddisks.
