There is no version of Mode32 that supports System 7.6. If you need to run System 7.6, a genuine ROM plus a bit of resource hacking is the only way forward for the SE/30. I can't imagine any real difference for most System 7.1 or 7.5 users -- Mode32 just replaces existing bad code provided by Apple in the SE/30's ROM. Code in RAM should execute a smidge more quickly than code in ROM but you're very unlikely to notice any difference.
After installing a IIsi ROM in my own SE/30, it initially froze on startup because the System 7.1 installation was specific for the SE/30. Reinstalling System 7.1 using the "For any Macintosh" option corrected the problem. I have no experience of System 7.5 on an upgraded SE/30 but I have no need. If you install of the extras suggested on Gamba's pages (Drag and Drop extensions, Thread Manager, Scriptable Finder etc) you'll have a functional equivalent to System 7.5.x that uses less memory and is very, very stable.
