I've got a 8.5GB external SCSI hooked up to my SE/30. I had a few problems with getting the whole drive recognised, but have partitioned it into 4 parts (System, Applications, Documents and a spare one) using Lido 7 (available for download all over the place, including System 6 Heaven). It works like a dream now.
As for versions of the Mac OS, again there are lots of articles out there recommending different things. There's a page at Jag's House about this too:

I'm running 7.5.3 on a 68030 with 20MB - works rather nicely. Startup is MUCH slower than when I had 6.0.8, but once loaded the overall speed is comparable.
