I think I can come up with some of those cables for the Keyboards and
stuff... $5 each cable if I remember correctly . . . there is a whole entire
wall of them in Rockford at this off-the-wall Mac shoppe.

I can confirm you can't use them.  The keyboard cable one the
128/512/Plus is a straight through cable.  Standard phone cables
(including the handset cord) have their pins reversed.
