I can confirm you can't use them. The keyboard cable one the 128/512/Plus is a straight through cable. Standard phone cables (including the handset cord) have their pins reversed.
The Mac keyboard cables use the same connector as handset cables (the one that goes from the base to handset on those phones that have them separate and cabled). It's known as an RJ-14.
However, with a cheap crimping tool and a handful of the blank plugs you can take telephone cables, cut the ends off and crimp on new connectors with the correct configuration of wires. Note that the plugs are not the same as the wall plugs. They're narrower. You can probably get the crimper and plugs at Radio Shack or Home Depot for under $10. I don't know what phone cords run.
