I presume you are using MacTCP. AFAIK, it does not support DHCP so you will need to configure a static IP address. (The option to obtain an IP address from a server is based upon an older protocol.)
Just make sure you know your w2k servers ip range (192.168.0.x) and subnet (255.255.255.0), Mactcp should work fine, give the SE, say 192.168.0.253 as its static address the click the "more" button. Input the w2k servers address into the dns and Gateway/router fields else all you may be able to do is ping.
If your using Open Transport, input the servers address into the DNS and Gateway/router fields and set the option to load tcp at startup.
The domain name can be found on the w2k box using winipcfg under the more button, remove the first part of the "host" name, which is the machines name and enter the rest in the domain box of mactcp or as the starting domain box of OT's TCP/IP control panel. Not very important but very bit helps.
I haven't used windows for ICS for some time, I'm pretty sure you input the DNS addresses provided by your ISP into the DNS fields on the client machines and leave the Gateway/router pointing at the w2k's 192.168.0.1 address. It wont hurt to add your ISP's DNS addresses to this field, leaving 192.168.0.1 as the "top or" default address.
If you have a few machines including older macs use a static address and allocate their address's to the upper end, 253,251,249 ect. This makes it easier to both remember their addresses and for ICS to dole out dhcp addresses to the lower end avoilding address conflicts when turning on a static machine after all the dhcp machines have already been started.
ICS wont care if you use a static address if these fields are filled. So in this case MacTCP is the better option over OT's bloat especially for the SE.
