I have used "NiftyTelnet" with a 7.1 + open transport 1.1.2 Mac IIci to connect to my G4 powerbook running 10.2.6. Neat.

The OpenSSH pages list all of the Mac clients (easy to find with Google or any other search engine). Even if the spec for a client says System 7.5, it's worth a try. Add the usual extensions -- Thread Manager, Drag and Drop, AppleScript etc -- and give it a go. Gamba's pages list the most useful extensions for pre System 7.5 Macs.
